Federico Perez Dias
Born in Buenos Aires, Federico was inspired to cook from a young age, by his Andalusian grandmother. He trained at the prestigious Escuela de Hosteleria Hofmann in Barcelona. After graduation, Federico joined Can Roca (3 Michelin stars and rated ‘World’s Best Restaurant’ in S.Pellegrino rating) as an unpaid intern and progressed within 2 weeks to Sous Chef. In London, he has headed up kitchens at my hotel in Chelsea, Selfridges Hotel and Hippodrome Casino. He’s now Head Chef at Comedor Grill and Bar on Upper Street where he cooks Argentine and Latin American classics with a contemporary, ‘unmistakeably Federico’ twist.
